GEM® avocado Vegan poke bowl

Bling up your bowl with this delicious GEM® avocado Vegan poke bowl by happyskinkitchen. Creamy and smooth, GEM® is a rare, gold flecked variety of avocado which has a slightly nutty flavour and is wonderfully buttery!

GEM® avocado Vegan poke bowl

Ingredients

Tofu marinade

  • 5 tbsp of smooth and runny peanut butter

  • 5 tsp of soy sauce

  • 2 tsp of toasted sesame seed oil

  • 3 tsp of maple syrup

  • 5 tsp of rice vinegar

  • 1 crushed garlic clove

 

Rest of the bowl

  • 1 GEM® avocado, peeled, stone removed and sliced
  • 300g of firm tofu cut into cubes

  • 250g of cooked brown rice

  • 4 handfuls of shredded purple cabbage

  • 2 handful of greens of your choice 

  • 1 carrot sliced into ribbons or thin strips

  • 200g of cooked edamame beans

  • 1/2 cucumber cut into slices

  • 4 radishes finely sliced

  •  

  • A sprinkle of sesame seeds

  • The juice of 1/2 lime

Method

  1. Preheat the oven to 200°C/fan 180°C/gas mark 6. Line a baking tray with some non-stick parchment paper.
  2. Mix all the marinade ingredients into a bowl until smooth and creamy.
  3. Add the tofu cubes and ensure they are evenly coated.
  4. Spread the tofu on the baking tray and bake in the oven for 30 minutes until crispy.
  5. Save any of the leftover marinade and add a dash of water.
  6. Assemble your poke bowl by adding the greens to the bottom of the bowl, then add the brown rice and all the vegetables.
  7. Add your crispy tofu, creamy GEM® avocado, sprinkle with some sesame seeds and add the lime juice.
  8. Serve with a drizzle of the dressing.
