This delicious pasta dish by Lucy and Lentils is the perfect mix of creamy GEM® avocado pesto and delicious pasta. A perfect recipe for the whole family. 

Creamy GEM® avocado pesto with orecchiette pasta

Ingredients

  • 400g orechiette pasta   

 

GEM® avocado pesto  

  • 1 GEM® avocado, peeled and stone removed
  • 2 cloves garlic  
  • 20g basil  
  • 35g cup pine nuts  
  • 1/4 tsp black pepper 
  • Pinch of salt  
  • 4 tbsp olive oil

Method

  1. Cook the pasta according to the pack instructions
  2. While the pasta is cooking, put all the pesto ingredients (reserving a few basil leaves) into a blender and mix until smooth.  
  3. Drain the pasta, reserving a little of the cooking water. Mix the pesto in with the cooked pasta, adding a little of the cooking water if needed to loosen the mixture.
  4. Serve with a grind of black pepper, garnished with the remaining basil leaves, with your favourite vegetables or a side salad if desired.
