GEM® Avocado Gourmet Milk Ice Cream

The creamy GEM® avocados give this ice cream an indulgent richness. For an extra treat try folding in chocolate chips or finely crushed peanut brittle after churning.

GEM® Avocado Gourmet Milk Ice Cream


  • 2 GEM® avocados, peeled and stones removed
  • 85g caster sugar
  • 1 small vanilla pod, seeds scraped or 1 tsp vanilla bean paste
  • 1 lemon, juiced
  • 1 lime, juiced
  • 475ml whole milk
  • 1 x 170g can evaporated milk


  1. Put the sugar and vanilla in a small saucepan along with 3 tbsp water and heat gently until the sugar has dissolved. Leave to cool completely.
  2. Put the GEM® avocado flesh, lemon and lime juices and evaporated milk in a blender or use a stick blender to blend until very smooth. Then add the milk and cooled sugar mixture and blend until well combined.
  3. Place the mixture in an ice cream mixer if you have one and churn for 1 hour. Freeze for another hour before serving. If you don’t have an ice cream machine, pour the mixture into freezer-proof container, cover and freeze for 1 hour then mix vigorously every hour for 5 hours – a stick blender works well for this.
  4. Remove from the freezer around 10 minutes before serving, and enjoy.
