Sweet and creamy GEM® avocados always taste great with chilli, so why not take it next level with a rich cheese sauce and crispy onions? GEM® avocado and sriracha sauce, plus chips! What’s not to love?

Pile them High - GEM® & Korean Fries


  • 1 GEM® avocado, peeled and stone removed
  • 1kg pack frozen reduced-fat oven chips
  • 20g sunflower spread
  • 20g plain flour
  • 300ml semi-skimmed milk
  • ½ tsp cayenne pepper
  • 75g mature cheddar cheese, grated
  • Juice 1 lime
  • 50g toasted sesame seeds (we used black and white)
  • 2 tbsp crispy onions
  • 2 tbsp jalapeños, drained
  • Sriracha sauce, to taste
  • Black pepper, to taste


  1. Bake the chips according to the pack instructions.
  2. While the chips are cooking, melt the butter in a small saucepan. Add the flour and mix to make a smooth paste. Cook over a low heat for 1 minute, stirring continuously. Remove from the heat and gradually add the milk, beating well as you go. Once all mixed in, return the pan to the heat to thicken. Add the cayenne pepper, cheese and a pinch of pepper to taste. Let the cheese melt, then set aside to keep warm – you might need to loosen with a little extra milk as it sits.
  3. Cut the GEM® avocado flesh into 12 wedges and drizzle with the lime juice. Put the sesame seeds in a bowl then roll the avocado wedges in them to coat thoroughly.
  4. Scatter the chips across one large serving plate or in four individual bowls. Pour over the cheese sauce, add the GEM® avocado wedges and sprinkle with the crispy onions and jalapeños. Finally, drizzle with the sriracha according to your taste.
