Spaghetti Aglio, Olio e GEM® Avocado

Call off the search – we’ve found the perfect mid-week dinner recipe, featuring chilli and garlic coated spaghetti, tossed with creamy and slightly nutty GEM® avocado cubes. Bon Appetit.

Spaghetti Aglio, Olio e GEM® Avocado


  • 2 GEM® avocados, peeled, stone removed and cut into cubes
  • 400g spaghetti
  • 4 tbsp avocado oil
  • 1 red chilli, seeds removed and finely chopped
  • 2 garlic cloves, crushed
  • 1 bunch parsley, finely chopped
  • Parmesan cheese, grated, to serve (optional)


  1. Cook the spaghetti according to the pack instructions in plenty of salted water until al dente.
  2. Heat the avocado oil in a large frying pan over a medium heat. Add the chilli and garlic and fry for 1 minute, taking care not to burn them.
  3. Drain the spaghetti and toss with the chilli and garlic oil. Stir in the parsley and GEM® avocado cubes. Season with salt and pepper and serve.

Recipe tip

Replace the parsley with coarsely chopped rocket.
