Tricolore Smashed GEM® Avocado on Toast

Tricolore Smashed GEM® Avocado on Toast


  • 1 ripe GEM® avocado, peeled, pitted
  • Juice of 1 lemon (about 2 tbsp)
  • Salt and pepper
  • 3 tomatoes (mixed types – we used purple and vine tomatoes), sliced or roughly chopped
  • 125g ball of mozzarella, torn
  • A few basil leaves, torn
  • 2 slices of toast
  • A drizzle of extra virgin olive oil


  • A drizzle of Balsamic vinegar


Add the avocado, lemon juice and some salt and pepper to a bowl and roughly mix and smash with a fork.

Toss the tomato pieces with some salt, pepper, some of the basil and a drizzle of olive oil.

Spread the smashed avo on the toast, top with the tomatoes, more basil, a little drizzle of olive oil and balsamic (if you like).
