White bean and GEM® avocado bowl

This delicious bowl by erin.appetit is the perfect mix of buttery and creamy GEM® avocados with a nutty flavour. Perfect for lunch or a light dinner, try sharing a nourishing bowl with your loved ones. 

White bean and GEM® avocado bowl

Ingredients

For the Bowl:

  • 1 GEM® Avocado
  • 4 handfuls kale
  • 400g can butter beans in water, rinsed and drained
  • 2 tbsp freshly chopped flat-leaf parsley
  • 1 tomato, chopped
  • 4 tbsp pomegranate seeds
  • 30g feta cheese, crumbled (optional)

For the Dressing:

  •  3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 garlic clove, crushed
  • ½ -1 tsp dried crushed chillies
  • Salt and pepper, to taste

Method

  1. Lightly steam the kale until it’s just tender but still with some bite.
  2. Make the dressing by putting all the ingredients into a bowl with 1 tbsp water and mixing together.
  3. Combine the butter beans with the parsley, tomato and pomegranate seeds. Add half the dressing to the bean mix and toss together. Season with black pepper.
  4. Cut the GEM®avocado in half lengthways, remove the stone and carefully scoop out the flesh, keeping the avocado halves intact.
  5. Divide the kale between two bowls. Add the bean mixture, top with the avocado halves, drizzle over the remaining dressing and top with the crumbled feta, if using.

 

Tip: For a more substantial meal, add your favourite grains. Great choices include brown rice, bulgar wheat, wholemeal couscous or quinoa.
